What makes Buckeye Brownie Cookies so special?

  • Rich Chocolate Flavor: The brownie base of these cookies is made with high-quality cocoa and semi-sweet chocolate. This depth of chocolate flavor not only satisfies your cravings but also pairs beautifully with the peanut butter topping.

  • Creamy Peanut Butter: What sets these cookies apart is the generous dollop of creamy peanut butter on top. This adds a satisfying richness that creates an incredible taste experience, reminiscent of classic Buckeye candies.

  • Chewy Texture: Unlike traditional cookies, the brownie center gives these treats a moist, chewy texture that is simply irresistible. Each bite melts in your mouth, leaving you wanting more.

  • Versatility: These cookies can be enjoyed straight from the oven or chilled after they’ve set. They’re perfect for any season, whether it’s a summer picnic or a cozy winter gathering.

There’s something so charming about baking Buckeye Brownie Cookies that makes all its quirks worthwhile. You may just find that these cookies become a cherished recipe in your home, symbolizing joy, celebration, and delightful moments shared with loved ones.

Key Ingredients for Buckeye Brownie Cookies

Chocolate: For those deep chocolate cravings, I always turn to semi-sweet chocolate. It adds not just richness, but a wonderful depth that perfectly balances sweetness with a slight bittersweet taste. This makes each bite of your Buckeye Brownie Cookies exceptionally satisfying.

Flour: All-purpose flour is a must-have for these cookies. It provides the right structure, ensuring that they turn out tender and chewy, creating that delightful texture everyone loves in a cookie.

Cocoa Powder: I prefer using natural unsweetened cocoa powder—it elevates the chocolate flavor without drowning it in sweetness. This choice helps to enhance the overall chocolate experience.

Sugars: To achieve that unbeatable softness, I blend light brown sugar with granulated sugar. This combination not only keeps the cookies moist but also adds a hint of caramel-like flavor.

Eggs: Using fresh eggs at room temperature is key. They bring a richness to the batter and serve to bind all the ingredients perfectly.

Peanut Butter: Finally, don’t underestimate the power of smooth peanut butter. It infuses those iconic Buckeye flavors, making these cookies nearly irresistible.

Tips for Making Perfect Buckeye Brownie Cookies

Creating Buckeye Brownie Cookies is a delightful adventure that balances the rich flavors of chocolate and peanut butter. To ensure these treats turn out perfectly every time, here are some tried-and-true tips that many bakers swear by.

Choose Quality Ingredients

  • Chocolate: Always opt for high-quality chocolate; it truly makes a difference in flavor. Dark chocolate chips or a good chocolate bar can elevate your Buckeye Brownie Cookies significantly.
  • Peanut Butter: Use creamy peanut butter for a smoother texture. Natural peanut butter can sometimes make the filling too runny, so stick with the classic for best results.

Master the Dough

  • Chill the Dough: After mixing your brownie batter, chill it in the refrigerator for about 30 minutes. This helps the cookies hold their shape while baking, leading to that perfect chewy texture.
  • Don’t Overmix: When incorporating the eggs and flour, mix until just combined. Overmixing can lead to a dense cookie texture rather than the desired fudgy softness.

Assemble with Care

  • Layer Properly: When forming your cookies, ensure you form a well-defined layer of peanut butter filling in between brownie dough layers. This creates that signature Buckeye flavor burst with each bite.
  • Uniform Size: Use a cookie scoop to keep the cookie sizes consistent. This ensures even baking and that all your cookies are equally delightful.

With these pointers, you’ll be well on your way to baking the best Buckeye Brownie Cookies that your friends and family will love!

FAQs about Buckeye Brownie Cookies

However, sometimes questions arise as you’re mixing, baking, and savoring these delectable treats. Let’s dive into some frequently asked questions that might help elevate your baking game!

Can I use dark chocolate instead of semi-sweet?

Absolutely! If you prefer a richer flavor, substituting dark chocolate for semi-sweet chocolate is a great choice. Just keep in mind that dark chocolate tends to have a higher cocoa content, which can slightly alter the sweetness of your Buckeye Brownie Cookies. Adjusting your sugar might be necessary for balance.

How do I get my cookies to be chewy?

Achieving that perfect chewy texture in your Buckeye Brownie Cookies is all about how you handle your ingredients. Here are some tips:

  • Use brown sugar instead of white sugar, as the molasses in brown sugar contributes to moisture.
  • Make sure you don’t overmix the dough. This keeps the cookies tender.
  • Underbake them ever so slightly; pulling them out when they still look a bit soft will result in chewy bites as they cool.

Can I freeze Buckeye Brownie Cookies?

Yes, you can absolutely freeze your Buckeye Brownie Cookies! Allow them to cool completely first. Then, place them in an airtight container or a freezer bag, separating layers with parchment paper. They’ll hold up well for about 2-3 months. When you’re ready to indulge, just let them thaw in the fridge overnight, and they’ll taste as fresh as the day they were baked.

Description

Delicious chocolate cookies filled with creamy peanut butter and topped with silky ganache.

Ingredients

Scale
  • 8 ounces (226 g) semi-sweet chocolate, coarsely chopped
  • ¾ cup (90 g) all-purpose flour, spooned & leveled
  • ¼ cup (21 g) natural unsweetened or dutch-process cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 5 Tablespoons (71 g) unsalted butter, softened to room temperature
  • ¾ cup (150 g) packed light brown sugar
  • ¼ cup (50 g) granulated sugar
  • 2 large eggs, at room temperature
  • 2 teaspoon pure vanilla extract
  • ½ cup (85 g) semi-sweet chocolate chips
  • ½ cup (120 ml) heavy cream
  • 4 ounces semi-sweet chocolate, chopped
  • 2 Tablespoons (28 g) unsalted butter, melted
  • ¾ cup (90 g) confectioners sugar, powdered sugar
  • ½ cup (250 g) smooth peanut butter
  • ½ teaspoon vanilla extract

Instructions

  1. Melt the chocolate in the microwave (or you can do this in a double boiler). Microwave in 20 second increments, stirring after each until completely melted. Set aside to slightly cool.
  2. In a medium mixing bowl, whisk the flour, cocoa powder, baking powder, and salt together. Set aside.
  3. In a large bowl using a handheld or stand mixer fitted with a paddle attachment, beat the butter, brown sugar, and granulated sugar together on medium-high speed until smooth and creamy, about 2 to 3 minutes.
  4. Add the eggs and vanilla extract, and beat on high speed for 2 full minutes. Scrape down the sides and up the bottom of the bowl, then beat on high for 1 more minute.
  5. Add in the dry ingredients and beat on low speed until combined.
  6. Pour in the slightly cooled melted chocolate and mix on low speed until combined. Stir in the chocolate chips until evenly combined.
  7. Cover and chill the cookie dough for 20 minutes.
  8. Preheat oven to 350°F (180°C). Line large baking sheets with parchment paper or silicone baking mats.
  9. Using a small cookie scoop, scoop the dough into balls, about 1 ½ Tablespoons of dough. Roll in your hands into a smooth ball. Place 2 inches apart on the baking sheets and bake for 12-13 minutes or until the edges appear set. The centers will be soft, but will set up as the cookies cool.
  10. Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  11. Make the ganache by heating the heavy cream in a saucepan or microwave until steaming, but not boiling.
  12. Pour over chopped chocolate in a bowl. Let sit for 3 minutes, then stir smooth. Allow to cool while you make the peanut butter filling. It will continue to thicken as it cools.
  13. In a medium mixing bowl, stir together the melted butter, powdered sugar, peanut butter and vanilla. You can do this with a wooden spoon, spatula or on low speed with an electric mixer.
  14. Once cookies are cooled top each cookie with about 1 ½ – 2 teaspoons of peanut butter filling. I scoop and then slightly flatten each scoop.
  15. Spoon a little of the cooled ganache over the top of each cookie. Let harden and enjoy!

Notes

  • For best results, use room temperature eggs and butter.
