- 2 cups fresh cherries, pitted and halved
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar, packed
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon almond extract
- 1/4 cup sliced almonds, for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter or cooking spray.
- In a medium bowl, combine melted butter and brown sugar. Pour this mixture into the bottom of the prepared cake pan. Arrange halved cherries, cut side up, over the brown sugar mixture.
- In a separate bowl, whisk together flour, granulated sugar, baking powder, and salt.
- In another bowl, beat the eggs, then add milk and almond extract. Mix well.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Carefully pour the batter over the arranged cherries in the cake pan.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for about 10 minutes, then invert onto a serving plate.
- Allow to cool slightly before slicing. Garnish with sliced almonds and serve warm or at room temperature.
