Description

This delightful cherry upside down cake is perfect for any occasion, featuring fresh cherries and a buttery cake batter.


Ingredients

  • 2 cups fresh cherries, pitted and halved
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar, packed
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon almond extract
  • 1/4 cup sliced almonds, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter or cooking spray.
  2. In a medium bowl, combine melted butter and brown sugar. Pour this mixture into the bottom of the prepared cake pan. Arrange halved cherries, cut side up, over the brown sugar mixture.
  3. In a separate bowl, whisk together flour, granulated sugar, baking powder, and salt.
  4. In another bowl, beat the eggs, then add milk and almond extract. Mix well.
  5. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  6. Carefully pour the batter over the arranged cherries in the cake pan.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for about 10 minutes, then invert onto a serving plate.
  9. Allow to cool slightly before slicing. Garnish with sliced almonds and serve warm or at room temperature.
