Description

A delicious and easy chicken fried rice recipe.


Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts, cubed
  • 4 cups cooked white rice (cold)
  • 2 cups frozen mixed vegetables
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon oyster sauce
  • 2 large eggs, lightly beaten
  • Salt and pepper to taste
  • 2 green onions, sliced for garnish
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Heat sesame oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned and cooked through.
  3. Stir in onion and garlic, cook until onion is translucent.
  4. Add mixed vegetables and cook for an additional 2-3 minutes.
  5. Push the mixture to the side and pour beaten eggs into the skillet, scramble until cooked.
  6. Add cold rice and soy sauce, mix well to combine.
  7. Season with salt, pepper, and crushed red pepper flakes (if using).
  8. Garnish with sliced green onions before serving.
