Ingredients

- 1 1/2 pounds boneless, skinless chicken breasts, cubed
- 4 cups cooked white rice (cold)
- 2 cups frozen mixed vegetables
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon oyster sauce
- 2 large eggs, lightly beaten
- Salt and pepper to taste
- 2 green onions, sliced for garnish
- 1/4 teaspoon crushed red pepper flakes (optional)
Instructions
- Heat sesame oil in a large skillet over medium-high heat.
- Add chicken and cook until browned and cooked through.
- Stir in onion and garlic, cook until onion is translucent.
- Add mixed vegetables and cook for an additional 2-3 minutes.
- Push the mixture to the side and pour beaten eggs into the skillet, scramble until cooked.
- Add cold rice and soy sauce, mix well to combine.
- Season with salt, pepper, and crushed red pepper flakes (if using).
- Garnish with sliced green onions before serving.
Notes
- This recipe can be adapted with other proteins or vegetables.
- Ensure the rice is cold to prevent it from becoming mushy.
