Description

A creamy and flavorful Cajun chicken pasta that’s perfect for a quick dinner!


Ingredients

  • 1 lb boneless skinless chicken breasts, thinly sliced and chopped
  • 3 Tbsp Cajun seasoning for chicken
  • 1 Tbsp olive oil
  • 1 red bell pepper, thinly sliced
  • 1 orange bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 cups broccoli florets
  • 1/2 large yellow onion, diced
  • 2 cloves garlic, minced
  • 8 oz Barilla Protein Plus Pasta, spaghetti, broken in half
  • 2 cups fat-free half and half
  • 2 cups low sodium chicken broth
  • 12 tsp Cajun seasoning for sauce
  • 1/2 tsp salt
  • Fresh cracked pepper
  • 1 medium zucchini, spiralized, 8 oz
  • 1/2 cup Parmesan Romano cheese blend, shredded

Instructions

  1. In a large pot, boil salted water and cook pasta according to package instructions. Drain and set aside.
  2. Season chicken with Cajun seasoning. Heat olive oil in a skillet over medium-high heat. Cook chicken until golden brown, then remove and set aside.
  3. In the same skillet, add onion, bell peppers, and garlic; sauté until soft. Add broccoli and cook until tender.
  4. Stir in half and half and chicken broth, then add Cajun seasoning and salt. Bring to a simmer.
  5. Add cooked pasta and chicken to the sauce, mixing well. Fold in spiralized zucchini and Parmesan Romano cheese.
  6. Serve hot, garnished with fresh cracked pepper.

  • For a spicier kick, add more Cajun seasoning.
