Description

A rich and creamy pasta dish featuring tender chicken and fresh spinach.


Ingredients

Scale
  • 2 pieces boneless, skinless chicken breasts
  • 2 cups fresh spinach, roughly chopped
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 8 oz fettuccine or linguine, cooked al dente
  • to taste salt
  • to taste freshly cracked black pepper

Instructions

  1. Cook pasta in salted boiling water until al dente.
  2. Drain pasta and reserve a small amount of cooking water.
  3. Season chicken breasts with salt and pepper.
  4. Melt butter in a skillet over medium heat.
  5. Add chicken and cook until golden and fully cooked.
  6. Remove chicken and slice into strips.
  7. In the same skillet, sauté garlic until fragrant.
  8. Pour in heavy cream and bring to a gentle simmer.
  9. Stir in Parmesan cheese until sauce thickens.
  10. Add spinach and cook until wilted.
  11. Toss cooked pasta and sliced chicken into the sauce.
  12. Add a splash of pasta water if needed.
  13. Season with salt and pepper before serving.

Notes

  • For added flavor, you can sauté some onions with garlic.
  • Use whole grain pasta for a healthier option.
