A delicious one-pan meal featuring chicken, spinach, and jasmine rice.
Ingredients

- 1 cup jasmine rice (rinsed)
- 2 cups water
- 2 pieces chicken breasts (boneless and skinless)
- 2 cloves garlic (minced)
- 2 cups fresh spinach (roughly chopped)
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 pinch paprika (optional)
- Salt to taste
- Freshly cracked black pepper to taste
Instructions
- Combine rinsed rice and water in a saucepan.
- Bring to a boil, then cover and simmer until rice is tender.
- Slice chicken breasts into strips.
- Heat olive oil in a skillet over medium heat.
- Add chicken and cook until lightly golden.
- Add minced garlic and sauté briefly.
- Add chopped spinach and cook until wilted.
- Stir in lemon juice and optional paprika.
- Season with salt and pepper.
- Serve chicken mixture over warm rice.

- Rinsing the rice helps to remove excess starch for better texture.
