Description

A delicious one-pan meal featuring chicken, spinach, and jasmine rice.


Ingredients

  • 1 cup jasmine rice (rinsed)
  • 2 cups water
  • 2 pieces chicken breasts (boneless and skinless)
  • 2 cloves garlic (minced)
  • 2 cups fresh spinach (roughly chopped)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 pinch paprika (optional)
  • Salt to taste
  • Freshly cracked black pepper to taste

Instructions

  1. Combine rinsed rice and water in a saucepan.
  2. Bring to a boil, then cover and simmer until rice is tender.
  3. Slice chicken breasts into strips.
  4. Heat olive oil in a skillet over medium heat.
  5. Add chicken and cook until lightly golden.
  6. Add minced garlic and sauté briefly.
  7. Add chopped spinach and cook until wilted.
  8. Stir in lemon juice and optional paprika.
  9. Season with salt and pepper.
  10. Serve chicken mixture over warm rice.
