Ingredients

- 4 large sweet onions, thinly sliced
- 4 tbsp unsalted butter
- 6 cups beef broth
- 1 cup grated Gruyère cheese
- 4 slices baguette
- 3 sprigs fresh thyme

Instructions
- In a large pot, melt the butter over medium heat.
- Add the sliced onions and cook slowly until golden brown and caramelized, about 25 minutes.
- Season with salt and pepper, stir in thyme sprigs, and cook for another 5 minutes.
- Pour in the beef broth and bring to a gentle simmer. Let cook for an additional 15 minutes.
- While the soup simmers, toast baguette slices until crispy.
- Serve hot soup in oven-safe bowls, top with toasted bread and grated Gruyère, then broil until bubbly and golden brown (about 3-5 minutes).

- For a vegetarian version, substitute beef broth with vegetable broth.
