Cranberry Butter Cake

Description

A delicious cranberry butter cake that is perfect for gatherings or as a sweet treat.


Ingredients

Scale
  • 3 Eggs
  • 2 cups Sugar
  • 3/4 cup Butter, Softened
  • 1 tsp Vanilla
  • 2 cups Flour
  • 12 oz Fresh Cranberries

Instructions

  1. Preheat oven to 350 degrees. Spray a 9 x 13 pan with non-stick spray and set aside.
  2. In a medium size bowl, beat together eggs and sugar for about 5 minutes. The mixture should thicken slightly, almost doubling in size, and be light in color.
  3. Beat in softened butter and vanilla for an additional 2 minutes.
  4. Mix in flour until just combined.
  5. Fold in fresh cranberries.
  6. Spread batter evenly into the prepared pan and bake for 40 minutes, or until lightly browned and a toothpick inserted into the center comes out clean.
