Description

This hearty slow cooker chicken pierogi stew is a delicious and easy meal that combines tender chicken with flavorful vegetables and cheesy pierogies.


Ingredients

  • 4 pieces boneless chicken breasts
  • 1 bag frozen pierogies (cheese or potato)
  • 4 cups chicken broth
  • 1 cup diced onion
  • 2 cups sliced carrots
  • 2 cups sliced celery
  • 1 teaspoon garlic powder

  • to taste chopped parsley for garnish

Instructions

  1. Dice the onion and slice the carrots and celery for uniform sizes.
  2. Place the chicken breasts at the bottom of the slow cooker. Top with the diced onion, sliced carrots, and celery.
  3. Pour in the chicken broth and add garlic powder, salt, and pepper. Stir gently to combine.
  4. Add frozen pierogies on top, without stirring, to allow them to absorb the flavors.
  5. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
  6. Once the chicken is cooked through, shred it with a fork and stir to combine. Adjust seasonings and garnish with parsley before serving.
