Ingredients

Scale
  • 1 lb beef sirloin or flank steak, thinly sliced
  • 1 tbsp light soy sauce
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch (for beef marinade)
  • 1/4 cup all-purpose flour
  • 3 tbsp cornstarch (for crispy batter)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp white pepper (optional)
  • 1/4 cup cold water
  • 46 cups vegetable, canola, or peanut oil (for deep frying)
  • 2 tbsp vegetable oil (for sauce)
  • 4 cloves garlic, minced
  • 2 inches fresh ginger, minced
  • 23 red chillies, deseeded, minced (adjust to taste)
  • 1 large red bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 1/2 cup light soy sauce (for sauce)
  • 1/4 cup rice vinegar (for sauce)
  • 1/4 cup granulated sugar
  • 1/4 cup chicken or vegetable stock
  • 2 tbsp tomato ketchup (optional)
  • 1 tbsp cornstarch, mixed with 2 tbsp cold water (for sauce slurry)
  • Fresh spring onions, thinly sliced (for garnish)
  • Toasted sesame seeds (for garnish)
  • Extra fresh red chilli slices (optional, for garnish)

Instructions

  1. In a bowl, combine the beef, light soy sauce, sesame oil, rice vinegar, and cornstarch. Marinate for at least 15 minutes.
  2. In another bowl, mix the flour, cornstarch, baking powder, salt, and white pepper.
  3. Heat the oil in a deep pan over medium-high heat. Dredge the marinated beef in the flour mixture and fry until golden and crispy. Remove and drain on paper towels.
  4. In a separate pan, heat vegetable oil. Sauté garlic and ginger until fragrant.
  5. Add in red chillies, bell pepper, and onion. Stir-fry until just tender.
  6. In a bowl, mix the light soy sauce, rice vinegar, granulated sugar, and stock. Pour into the vegetable mixture.
  7. Mix the cornstarch slurry into the sauce until thickened.
  8. Add the crispy beef back to the pan and toss to coat.
  9. Garnish with spring onions, sesame seeds, and extra chilli slices.
  10. Serve hot over rice or noodles.

Notes

  • Adjust the number of chillies according to your heat preference.
  • For extra crunch, fry the beef in batches.
  • Can substitute beef with chicken or tofu for a different variation.
