- 1 medium pineapple (peeled, cored, and sliced into rings)
- 1 cup all-purpose flour (for coating)
- 1 cup coconut flakes (sweetened or unsweetened)
- 2 large eggs (beaten)
- 1 cup vegetable oil (for frying)
- 1 cup coconut cream
- 2 tablespoons honey (or maple syrup)
- 1 teaspoon vanilla extract
- 1 pinch salt
Instructions
- Heat the vegetable oil in a frying pan over medium heat.
- In a mixing bowl, set up a breading station with flour, beaten eggs, and coconut flakes.
- Dip each pineapple ring first in flour, then in eggs, and finally coat with coconut flakes.
- Carefully place the coated pineapple rings in the hot oil.
- Fry for about 2-3 minutes on each side, or until golden brown.
- Remove from the oil and place on paper towels to drain excess oil.
- In a mixing bowl, combine coconut cream, honey, vanilla extract, and salt.
- Whisk until smooth and well combined.
- Serve the fried pineapple rings warm with the creamy coconut dipping sauce on the side.
