  • 2 tablespoons honey (or maple syrup)
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. Heat the vegetable oil in a frying pan over medium heat.
  2. In a mixing bowl, set up a breading station with flour, beaten eggs, and coconut flakes.
  3. Dip each pineapple ring first in flour, then in eggs, and finally coat with coconut flakes.
  4. Carefully place the coated pineapple rings in the hot oil.
  5. Fry for about 2-3 minutes on each side, or until golden brown.
  6. Remove from the oil and place on paper towels to drain excess oil.
  7. In a mixing bowl, combine coconut cream, honey, vanilla extract, and salt.
  8. Whisk until smooth and well combined.
