- 1 cup plain Greek yogurt
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- Zest of 1 lemon (optional)
- Powdered sugar, for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a round 9-inch cake pan and line the bottom with parchment paper for easy removal.
- In a large mixing bowl, combine the Greek yogurt, eggs, granulated sugar, softened butter, and vanilla extract. Whisk together until the mixture is smooth and creamy.
- In a separate bowl, sift together the all-purpose flour, baking powder, and salt. If using lemon zest, add it to the dry ingredients.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix, as this can affect the fluffiness of the cake.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. The cake should be slightly golden on top.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, carefully transfer it to a wire rack to cool completely.
- Before serving, dust the top with powdered sugar for a beautiful finish, if desired. Slice and enjoy your light and fluffy yogurt cloud cake!
