Description

A savory and tangy dish featuring marinated chicken thighs and caramelized onions, perfect for serving over rice.


Ingredients

  • 2 lbs bone-in chicken thighs
  • 3 large onions, sliced
  • 1/4 cup olive oil (divided)
  • 1/4 cup lemon juice
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 bay leaf
  • 1 teaspoon cayenne pepper (optional, adjust to taste)
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Instructions

  1. Marinate the Chicken – Begin by combining the lemon juice, mustard, garlic, ginger, apple cider vinegar, salt, black pepper, and cayenne in a large bowl. Stir well until it forms a thick marinade. Add the chicken pieces and coat them thoroughly. Cover and refrigerate for at least 4 hours, but ideally overnight.
  2. Sauté the Onions – In a large skillet or Dutch oven, heat half of the olive oil over medium heat. Add the sliced onions and bay leaf, then cook them slowly until they’re soft and golden brown, about 15–20 minutes, stirring frequently.
  3. Brown the Chicken – Remove the chicken from the marinade and pat it dry. Heat the remaining olive oil in a separate skillet and brown the chicken on both sides until golden crust forms.
  4. Simmer Everything Together – Return the chicken to the pot with the onions. Pour in the reserved marinade, cover the pot, and let everything simmer on low heat for 30–40 minutes.
  5. Serve and Enjoy – Serve your Poulet Yassa over fluffy white rice or a grain of your choice, spooning the savory onion sauce over the top, and add a slice of lemon on the side.
