Description

A delicious spaghetti recipe using fresh tomatoes, garlic, and basil.


Ingredients

  • 12 ounces spaghetti
  • 1 pound ripe tomatoes, chopped
  • 4 cloves garlic, minced
  • ¼ cup extra virgin olive oil
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon red pepper flakes
  • 1 cup fresh basil leaves, roughly torn
  • Parmesan cheese for serving

Instructions

  1. Cook spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve some pasta water before draining.
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant (about 30 seconds).
  3. Add chopped tomatoes, salt, black pepper, and red pepper flakes to the skillet. Cook for 5-7 minutes until softened.
  4. Toss the cooked spaghetti in the skillet with the sauce, adding reserved pasta water as needed to adjust consistency.
  5. Stir in torn basil leaves and serve hot topped with freshly grated Parmesan cheese.

Notes

  • For a richer flavor, you can add more garlic or use heirloom tomatoes.
  • This dish is best served immediately, but leftovers can be stored in an airtight container in the refrigerator.
