A delicious and easy appetizer made with whipped ricotta cheese and fresh figs.
Ingredients

- 1 cup whole milk ricotta cheese
- 1 tbsp olive oil
- 1–2 tbsp heavy cream or milk
- generous pinch salt
- generous pinch pepper
- 4 slices good-quality sourdough bread
- 4–6 large figs
- to taste honey
- to taste fresh basil
- to taste flaky sea salt
Instructions
- Make the Whipped Ricotta: Add the ricotta, olive oil, milk or heavy cream, and a generous pinch of salt and pepper to a small bowl. Whisk for a minute or two, until the ricotta becomes light and whipped.
- Assemble the Toasts: Toast your bread in the toaster or in a skillet on medium heat, or on a baking sheet in the oven. Spread on the whipped ricotta, then add your toppings. Slice the figs vertically into 2-3 slices each. Add them to the ricotta, then add a few fresh basil leaves, a drizzle of honey, and a sprinkle of flaky sea salt to each piece of toast.
- Serve + Store: Enjoy immediately! This is best made and eaten right when it’s made. Whipped ricotta can be stored in an airtight container in the fridge for up to a week.
