Baked Kielbasa and Pierogies

Description

Delicious baked pierogies with kielbasa, bell peppers, and onions.


Ingredients

Scale
  • 32 oz frozen pierogies (any color)
  • 2 bell peppers (seeded and sliced)
  • 1/2 red onion (sliced)
  • 12 oz kielbasa bites (or slice rope kielbasa into coins about 1/2″ thick)
  • 4 tbsp butter or oil (to grease pan)
  • 1 tbsp chives

Instructions

  1. Prep oven and baking pan. Preheat oven to 425ºF. Coat a baking sheet with a thick layer of butter or oil. Spread evenly.
  2. Prep veggies. Seed and chop bell peppers. Peel and slice red onion.
  3. Add ingredients to sheet pan. Add peppers, onions, pierogies and kielbasa bites (or sliced coins) to baking sheet. Spread out evenly.
  4. Bake. Cook for 20-25 minutes or until pierogies are golden brown and bell peppers and onions have softened. Half way through, give everything a stir and flip the perogies to more evenly cook everything.
  5. Add toppings and serve. Remove from baking sheet using a spatula and serve warm, topped with fresh or dried chives.

Notes

  • For a crispier texture, broil for the last 2-3 minutes of cooking.
